OPV stands for OverPrint Varnish, which is a means of applying varnish onto prints after it gets printed.

Glossy finish is shiny and vibrant, more susceptible to smudges and fingerprints. It has a finer detail finish and it is smooth to touch.
Matte ginish is less shiny and may look dull in color, and not visible to the smudges or fingerprints. It doesn’t reflect any glare or light. It can express a professional look when it’s been done in black & white prints.

Both UV varnish and AQ varnish can do glossy finish while both UV varnish and AQ varnish can do matte finish.
